Some time ago, I was approached by Boggiatto Produce to help them reach foodservice professionals across the country and share the benefits of using Garden Hearts® hearts of romaine. Since many of our restaurants and banquet operations at Pebble Beach Resorts have used Garden Hearts® exclusively for many years, I was happy to oblige.
Soon after, Michael Boggiatto came to me and a few other select chefs to enlist our assistance with development of a new product, Iceberg Babies®. Over the next several months, we chefs provided feedback about size, density and potential applications while Boggiatto Produce tailored planting and cultivation methods accordingly. Thus the softball-sized, moderately dense, and highly versatile Iceberg Babies® were born – virtually ‘for chefs, by chefs.’
The recipes in this section have been developed especially to meet your needs. From restaurants and catering and from business and industry to colleges and universities, our goal is to provide recipes and ideation that can be easily tailored to any foodservice environment.
